Easy Peasy Pea and Mint Soup

Today I decided to try the pea and mint cannellini soup from my Deliciously Ella cook book.

This meal was quick, easy and tasty. I found the ingredients were items I usually have in stock so I didn't have to go shopping, which was great.

Serves 4
750g of peas
1 litre of vegetable stock
1 x 400g tin of cannellini beans
12 sprigs of fresh mint
salt and pepper
Place the peas in a large saucepan and begin to heat gently.
Cook until the peas begin to boil, which should take about 10 minutes.
Take off the heat and mix the peas and stock with the cannellini beans and the mint leaves (remove them from their sprigs) in a blender until the soup is smooth and creamy.
Finally, heat the soup in a pan for a few minutes (if necessary), season to taste and then serve.
